Barbecuing is a widespread and honored tradition. Three out of four american families own a barbecue grill and use it, on average, four to five times per month. What better way is there to have fun with friends and family than to have a barbecue?

Before putting the meat on the barbecue it is a good idea to set it out of the refrigerator for about an hour to let it warm up. This will make the meat cook quicker and it will be juicier.

Food safety is an important issue so always be sure that you cook the meat thoroughly. Cut the meat in the thickest part to be sure that the juices are clear to be sure that it is completely cooked. Always be sure to keep utensils used to handle the raw meat separate from those you use to handle the cooked meat. Cross contamination of bacteria can be as dangerous as eating raw meat. You want your barbecue to be both fun and safe for everyone so always be careful.

Barbecued Spare Ribs are a classic American barbecue meal, made from pork. This version is cooked in the oven, not on a barbecue, and uses a barbecue sauce with a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Remember to give your barbecue a good cleaning after each use. If you have a gas grill, you can turn the grill on for ten or fifteen minutes to allow it self clean. Charcoal grills need to be cleaned with soap and water using a stiff wire brush.

Grilled Stuffed Pork Chops

Ingredients:

4 thick rib pork chops, (1″ to 1 1/4″ thick is best)
3/4 cup dry breadcrumbs
Large pinch dried and crumbled rosemary
Large pinch dried and crumbled marjoram
1 Tbsp. melted butter
1/2 cup minced sweet onion
1 small clove garlic, minced
salt and/or pepper to taste

Make several shallow cuts in each pork chop with a knife.

In a large bowl mix the breadcrumbs, herbs, butter, onion, garlic, and salt.

Stuff the mixture into the cuts you made.

Grill the pork chops at medium to high heat for ten minutes on each side side. To make sure the chops are evenly cooked they should be turned several times. Grill them for five minutes or so then turn them over and let that side cook for 5 minutes. Repeat this process two or three times or until the chops are grilled to your satisfaction.

Barbecued Spare Ribs

Here is a classic American barbecue with a twist. This version uses a barbecue sauce that has a distinct Asian flavor, featuring soy sauce, rice vinegar, and garlic.

Ingredients:

2 pounds pork spare ribs
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons hoisen sauce
2 tablespoons white vinegar
1 tablespoons sake
2 cloves garlic, minced
1 teaspoon sugar
1/4 teaspoon of freshly ground white pepper
2 tablespoons chicken stock
freshly ground black pepper and salt to taste

Put the spare ribs in a large casserole dish in one layer.

Using a large bowl, combine the rest of the ingredients. Pour this mixture over the spare ribs being sure to completely coat the meat. Let this marinate overnight, baste occasionally unless the meat is completely covered.

Throw the ribs on the grill and let them cook to your satisfaction. Turn them several times during the process and baste them with the marinade sauce a few times.

End of the Grilling Season

Here on the east coast, as thoughts of Halloween starts to creep into our kids minds, as adults we start to put away our grills. Sure we had a great summer of grilling, but now that it is ending, what do we have to do to make sure that $500-$1,000 grill will work again next summer? This means we need to break it down!

Propane Tanks
This should be your first matter of attention. It’s always good policy to run your tanks empty before storing the tanks away for the winter. What does it mean to run your tanks empty? The best bet in my opinion is to have one last cookout or grilling! Get a bunch of steak, burgers or hotdogs and do it up one more time. Now, when the meat is off the grill completely and all cooked up, go ahead and keep the burners going. That way, the fire feeds off the gas completely and you’ll know then when there’s no more gas left. Call the cook out the “end of the year I must drain my tank” cookout. Once your propane tank is properly emptied, go ahead and store it in a dry, cool place. Garages, and basements are best options. However, depending on where you live, covering the propane tank and leaving it outside will work too. It works in my family, year after year!

With your propane tank properly stored, you need to turn your attention on your grill. What many people fail to do is to correctly scour and clean the grill when putting it away at the end of the year. This only leaves more of a hassle at the beginning of next year, and no one wants to do that. So here is what I do:

Once the propane tank is empty, and once it’s cooled down enough to where I can touch it, I break out the metal scrub brushes that get down and dirty in the fight against burnt up meet and charcoal. This is where you really need to scrub and there are different solvents available for this. What I like to do is take a beat up towel that is bound for the refuse pile anyways, wipe it down with a cleaning agent and then proceed to wipe down the grill. This is done so that you’re not directly spraying any chemicals on the grill itself. Wipe it down, and then scrub til the grime and dirt and left over food is all wiped away.

Then get ready for next year, because the grilling is just around the corner

Menu Ideas For The Barbecue Grill

A good barbecue isn’t easy and there’s no substitute for experience but we’ve all got to start somewhere so if you’re a BBQ novice then read on.

Below are plenty of fantastic barbecue tips and menu ideas for the grill so if any ladies out there have read my article entitled “Modern Man And The Barbecue Grill” you’ll already be on the road to converting your man from the fire pits to the BBQ King with some easy BBQ recipes.

I’ve already spoken about the patience that’s required when it comes to lighting the grill and the need to heat up the coals and eliminate the flames. Remember, “coals are hot, flames are not!” and we’re on the road to a successful BBQ cookout. This same rule applies to gas grills as well as charcoal, gas grills may be more or less instant but it’s still important to ensure that the lava rocks are fully warmed through and this usually takes about 15 minutes. Charcoal of course will be more like 45 minutes before it’s ready to cook on.

So what’s the next step? The best tip I can give is to take time to plan the menu, think carefully about what you’re going to cook.

But isn’t it easier just to do burgers and sausages? No! In fact burgers and sausages are quite difficult for to reasons:-

1. Relatively speaking they’re high in fat compared with other foods. Now I know we need fat to drip onto the coals to create the smoke to give the flavor but too much fat and the BBQ will flare up - a sure fire way to cook up a burnt offering.

2. They’re made from ground beef and that means they must be cooked through. Food poisoning is generally caused by the bacterium e-coli that grows on the surface of the meat. Cook the outside of a steak and you can safely eat the inside raw but think about a burger, with ground meat, the meat that’s on the inside has also been on the outside.

So if you’re not yet convinced about your man’s BBQ capabilities choose a meat that doesn’t need to be cooked through to be safe. Try barbecue beef, barbeque lamb or BBQ fish.

Back to the “coals are hot, flames are not” theme it’s important to light up the grill on its highest position away from the coals. This means that the meat will be cooked slowly therefore giving you the best guarantee that it will be cooked through and should there be a “flare up” you are as well protected as you can be from burning. Of course if it’s going too slow, lower the grill step by step until you get the sizzle, in other words start gently and slowly work up the heat.

Finally to make for a really flavorful cookout, why not try a marinade? Marinades not only add flavor they also tenderize and all that’s needed is a little thinking ahead for preparation time. Make Sauerkraut Part of your Summer Grilling

Bear Creek, Wis. – Shine the chrome skewers, grab the spring-loaded tongs, and don’t forget the long-handled fork. Summer’s just around the corner and that means it’s time to roll out the grill. True-blue grillers will enjoy extra-tasty outdoor cooking when they include Sauerkraut on their menus.

Sauerkraut is one of the must-have grilling ingredients of the summer, especially given the mass consumption of favorites like hot dogs, sausages, and bratwursts. The National Hot Dog and Sausage Council estimates that Americans will consume 20 billion hot dogs this year.

HOT GERMAN POTATO SALAD

5 medium red potatoes

6 slices of bacon

½ cup medium onion, chopped

½ cup apple cider vinegar

1 tsp. salt

¼ tsp. pepper

2 Tbsp. parsley, chopped

In a large pot, boil potatoes until tender. Drain and cool. Peel potatoes and cut into large diced pieces. In a 10-inch frying pan, cook bacon until crisp. Drain bacon on paper towels, reserving drippings. Cut bacon into ½-inch pieces. Sauté onions in the bacon fat until translucent. Add water and vinegar to deglaze the pan. Bring to a boil. Stir in Sauerkraut, potatoes, and chopped bacon. Season with salt and pepper. Heat through. Remove from heat and stir in parsley. Serve immediately.

Servings: 2-4

Modern Man And The Barbecue Grill

Here’s the enigma of the barbecue grill…..

Two customers have complained today and one of my suppliers just isn’t providing the quality of materials that I need. In short it’s been a rough day “at the office”. I’m a bit down in the dumps but as soon as I get home and my heart lifts. My children greet me and are itching to tell me all about their day and there’s a wonderful smell of cooking coming from the kitchen.

I give my wife a hug and ask “Hey, what’s cooking?”

Tonight will be oven roasted chicken thighs on a bed of vegetables roasted in olive oil. A ciabatta loaf is warming in the oven and there’s a bottle of merlot open to breathe on the kitchen table to round it all off. What better way to start the evening?

I know without any further inspection that what my nose tells me smells good really is good simply because my wife has many years experience, she enjoys cooking and therefore knows the subject inside out.

OK so I may be taking it a little to the extreme to make the point and before you all start hollering back, let me point out that I do my family’s ironing and I clean the bathrooms so I’m part way from “Neanderthal” to “modern man”. I’m sure there’s plenty of us out there, sincerely I hope so.

My point is that considering all this talent my wife has and all her experience at cooking, why is it that when it’s time for a BBQ cookout it’s me that takes on the grill duties? The man of the house! What qualifications do I have? How much experience do I have?……… Zip….Nada…Niente! I can’t even follow the most elementary grill recipes.

If I were applying for a job as a car mechanic which garage in their right mind would take me on? Yet armed with the most appalling gastronomic CV I’m trusted not to poison the family and if that weren’t enough, we invite our best friends round in the honest belief that I won’t poison them too!

Ever been to a BBQ cookout where the hamburgers are burnt on the outside and frozen in the middle? I’m sorry to say that while we might have moved someway towards modern man with the housekeeping duties, we’re still eons away when it comes to the barbecue grill or meat smoker.

Now it has to be said that lighting the barbecue is definitely a man’s job. C’mon guys who doesn’t like playing with fire? So how ladies, do you eat safe in the knowledge that you’ll live until tomorrow? Well I’ve got one simple barbecue tip:-

Give him the matches and the firelighters but don’t give him any of the food - at least not for 45 minutes if charcoal, 15 minutes if gas. Believe me, if you bring it out any earlier it’ll be a cremation rather than a BBQ party.

My tip for good food is gentle cooking, heat is good and flames are bad. Fat dripping onto the coals creates the smoke that flavours the food but that same fat also can cause flames if the coals haven’t been allowed to settle. So in short, the coals should be hot and the flames not.

How do you keep your man away from the food without a padlock and chain on the refrigerator door? Give him a beer……or two! After all - I am a man!
